Mushroom Pate


MUSHROOM PATE

Serves 4

INGREDIENTS

  • 2 oz of margarine

  • 2 oz of breadcrumbs

  • 12 oz of mushrooms (any kind, or mixed)

  • 1 teaspoon of coriander seed

  • 1 oz of creamed coconut

  • 1 medium onion, chopped finely

  • sea salt and black pepper

METHOD

Fry the onion in the margarine until soft. Add the mushrooms and fry for one minute. Add the coriander seed, salt and pepper. Cook for around 10 minutes and then stir in the coconut and breadcrumbs. Blend in a food processor and then chill. Delicious with granary bread.
