Jane made this recipe with "perpetual spinach" (leaf beet) from her garden for the "Growing Words" event
INGREDIENTS
- 12 oz spinach
- 1 onion
- 6 eggs
- 2 teaspoonfuls of grated parmesan or other cheese
- Seasoning to taste, e.g. garlic
Method
- Cook the spinach with just the washing water
- Drain it and squeeze it dry
- Chop finely
- Fry the onion until soft
- Mix with the spinach
- Beat the eggs and add the grated cheese and add the spinach mixture and the seasoning.
- Heat oil in a 9 inch 23cm frying
- Add the egg mix and stir lightly until it starts to set
- Cook for about 5 minutes until the undeneath is set.
- Put a large plate upside down over the pan, turn it over and slide the fritata out gently.
- Heat more oil in the pan, slide the fritata back in and cook the other side till set.
