Spicy Veg Balls in tomato sauce


INGREDIENTS

125g/4oz carrots
125g/4oz potatoes
125g/4oz gram flour
1 onion
1 tsp garam masala } Or spice of your choice
1 tsp turmeric         }
1 bunch fresh coriander, chopped
600g/1lb 5oz chopped tomatoes
salt and pepper

Method

1. Finely grate the carrots and the potatoes and then squeeze them to remove the juices.
2. Mix in the gram flour and a little salt and pepper
3. Form the mixture into balls in your hands then deep fry them at 180C/350F for about 10 minutes, until they are a little darker than golden brown. Drain and keep warm.
4. Finely chop the onion and fry it in a little oil
5. Add the garam masala, turmeric and fresh coriander and fry together for 2-3 minutes.
6. Add the chopped tomatoes.
7. Bring to the boil, set aside.
8. Put the spicy balls into the sauce, leave to soak for 5 minutes and then serve with rice, or pasta.
