This is a recipe Ruth learnt from Nishat. She made it for "Growing Words", using veg from her own allotment.

INGREDIENTS

  • A mixture of thinly sliced, chopped veg (e.g. onion, spinach, potato)
  • 2 or 3 chillies, finely chopped
  • 1 teaspoon of cumin seeds
  • A handful of coriander leaves
  • Gram flour (this is made from ground chickpeas)

METHOD 

  1. Cover chopped veg with gram flour and mix. 
  2. Leave for one hour to let water from veg soak up.
  3. Add more flour and enough cold water to form a thinck batter.  (Be careful not to let it get too wet.)
  4. Deep fry tablespoonfuls of the mixture until they are golden and float.
  5. Eat and enjoy!
